Five thousand tears later, tea is still the world’s most popular prepared beverage. The three main categories of tea—green, black and oolong—all come from the same plant species, Camellia sinensis, which is grown mainly in Asia, Africa and South America. The difference lies in how they are processed.
Black tea leaves are oxidized for several hours during their preparation for market; oolongs receive less oxidation, and green teas are not oxidized at all. There are, of course, many different varieties within these three main categories.
Through the ages, right back to Neanderthal times, many kinds of leaves, barks and berries have been infused or steeped in water and used as both beverages and medicines. Tea, merely one of many plants used in this way, was new in seventeenth-century England, but its popularity was such that in common speech other infusions began to be referred to as “herbal teas” or later by the more chic French word tisane.
